Don Godo - Medium Roast
Share
Our Signature Don Godo coffee, cultivated in La Cordillera del Bálsamo in the department of La Libertad, is a medium roast coffee with a strong aroma featuring notes of dark chocolate and citrus, reminiscent of orange peel. When ground, the characteristic citrus notes become more pronounced. After extraction, the coffee delivers a mild aroma and flavor, preserving its dark chocolate undertones with low acidity, a medium body, and slight bitterness—an excellent choice for daily enjoyment.
The Importance of Grind Size
The grind size used when preparing coffee is just as crucial as harvesting at its optimum point or roasting with precision. Every step plays a role in achieving an exceptional final result.
Brewing Methods & Flavor Profiles
Drip Coffee – Use 7g of freshly ground medium-grind coffee per cup of water. While citrus notes are intense in whole bean and ground form, the coffee presents no acidity in taste, offering a round body and slight bitterness, distinct from its aromatic profile. | ![]() |
French Press – Use 8g of freshly ground coarse-grind coffee per cup of water. This method releases a soft citrus aroma with dark chocolate notes, a medium body, slight acidity, and a more pronounced bitterness, creating a balance that enhances the flavors. The best option for extracting our Family Blend Don Godo coffee. |

Espresso – Use 7g of finely ground coffee for a more intense dark chocolate aroma with reduced citrus notes. The low body and lack of crema allow acidity to prevail over bitterness and sweetness. Using 10g of finely ground coffee increases the body of the espresso, stabilizing acidity and bitterness while maintaining and enhancing its rich aromas. |
